Jaggery is a particular sugar popular in India derived from sugarcane juice. A practice was executed to estimate the quality of jaggery by packing it with different materials. The results exhibited that the most suitable packaging material for storing jaggery, lessening sugar content, moisture content, porosity, and microbial load in jaggery was to be very minimum in jaggery packaged under vacuum in three-layer material.
During the packaging of jaggery or the jaggery powder, excess oxygen can be stored with it and spoil the shape, taste and colour of the food. Here the oxygen absorbers take charge. There is not much variation in the packaging material of jaggery.
